Potatoes With Lime Mayonnaise

"You can either broil or grill the potatoes, and then serve with the lime mayonnaise, which gives a wonderful tangy flavor. I suggest leaving the skins on the potatoes, however you prepare them. I would also experiment with other herbs besides thyme, such as rosemary or basil."

  • Cut the potatoes into 1/2 inch thick slices. Cook in a pan of boiling water for 5-7 minutes. They should still be very firm. Remove with a slotted spoon and drain thoroughly.
  • Line a broiler pan with foil. Arrange the potato slices on top with no overlapping.
  • Brush potatoes with melted butter and sprinkle with thyme. Sprinkle salt and pepper to taste.
  • Cook in a preheated broiler at medium heat for 10 minutes, turning once.
  • Meanwhile, make the lime mayonnaise. Thoroughly combine mayonnaise, lime juice, lime rind, garlic, paprika, salt and pepper to taste in a small bowl.
  • Dust the hot potato slices with paprika and either serve with mayonnaise on the side, or spoon it on top before serving.

  1. Just what I was looking for! Very tasty, especially as leftovers the next day when I pan fried the potatoes to heat them up. I boiled the potatoes for 7 minutes - I think next time I will try only 5.
