- 1 lb potato, scrubbed
- 3 tablespoons butter, melted
- 2 tablespoons chopped thyme
- 3 teaspoons paprika

Lime Mayonnaise
- 2⁄3 cup mayonnaise
- 2 teaspoons lime juice
- 1 lime, grate the zest
- 1 garlic clove, crushed
- 1 pinch paprika
- salt and pepper
directions
- Cut the potatoes into 1/2 inch thick slices. Cook in a pan of boiling water for 5-7 minutes. They should still be very firm. Remove with a slotted spoon and drain thoroughly.
- Line a broiler pan with foil. Arrange the potato slices on top with no overlapping.
- Brush potatoes with melted butter and sprinkle with thyme. Sprinkle salt and pepper to taste.
- Cook in a preheated broiler at medium heat for 10 minutes, turning once.
- Meanwhile, make the lime mayonnaise. Thoroughly combine mayonnaise, lime juice, lime rind, garlic, paprika, salt and pepper to taste in a small bowl.
- Dust the hot potato slices with paprika and either serve with mayonnaise on the side, or spoon it on top before serving.
