  1. In a large pan, mix sugar and cream well.
  2. Place on moderate heat and boil.
  3. Cook mixture until a ball forms when you drop it in cold water (soft ball stage).
  4. Remove from heat.
  5. Add butter and pecans.
  6. Beat by hand for approximately 3 minutes.
  7. If candy starts to get too hard, add just a little cream.
  8. Drop onto waxed paper or pour onto large jelly pan and let cool.
