Prawn & Avocado Cous Cous

  • Place cous cous in a heatproof bowl.
  • Add 2 cups (500ml)warm water and set aside for 15 minutes or until the liquid is absorbed.
  • Use a fork to separate the grains.
  • Cut prawns lengthwise.
  • Stir in the shallots, tomatoes, coriander, prawns and avocado.
  • To make the lime dressing, combine the lime rind and juice, honey, oil and season with salt and pepper to taste.
  • Pour over the cous cous mixture and toss well to serve.
  • TIP:

  • Once avocados are cut, squeeze some lemon juice over the flesh.
  • This helps prevent the flesh from darkening when exposed to the air.

  1. I really enjoyed this salad. Came together in a snap. I did adjust amounts to serve myself, which resulted in a two serving size. I also subbed in parsley for the coriander, as I don't care much for it. :)
     
  2. This was very good. I made it last night for lunch today. My DH took it in his lunch box. He loved it and said he'd like to see it again. I loved it too but I loved it more last night. I think it was better fresh than sitting over night. It was very easy to make, especially with prawns that I bought already cooked. The only things I did different was to use swt onions, no shallot, and added garlic to the dressing. Also, I wanted to mention that I did not like the dressing when I tasted it b4 adding to the salad but I figured there was no turning back. I'm glad I didn't mess with it too much 'cause once on cous cous it was perfect. I also didn't use any corianer 'cause DH doesn't like it. It would look lovely in a lettuce cup for a special lunch. It would also make a nice additon to a cook out or pot luck. I bet it would be very yummy next to grilled chicken or steak. In fact, I think I'll add that to next weeks menu. Thanks for posting this yummy dish. Oh, and your servings were right on. Served 4 perfectly. UPDATE: Yes, it is very good as a side to grilled chicken. I just use a little garlic powder and paprika and a touch of cuman on the chicken. I also added chick peas this time and left out the tomato 'cause I didn't have enough. Another addition I will try is cucumber.
