Directions

  1. In a very large saucepan or pot, cook pasta according to package directions. Drain and return to saucepan. Keep warm.
  2. Meanwhile, in a large skillet, cook and stir chicken in hot oil for 2 or 3 minutes or until tender and no longer pink. Remove chicken, reserve drippings in skillet.
  3. Cook and stir mushrooms, red pepper, and garlic in skillet drippings over medium heat for 4 to 5 minutes or until tender.
  4. Stir in cornstarch, salt, oregano and black pepper. Add milk. Cook and stir until slightly thickened and bubbly; cook and stir 1 minute more.
  5. Stir in chicken, spinach, pepperoni, and Parmesan cheese; heat through.
  6. Pour over cooked pasta; toss to coat. Makes 4 to 6 servings.
