Pressure Cooker Ratatouille

"A healthy vegetable stew (electric pressure cooker) I like to add a cup of shredded Italian blend cheese when adding the basil and parsley but this is optional."

  • Heat olive oil in pressure cooker using the Brown setting.
  • Add onions, garlic, peppers and brown until the onion is soft.
  • Add zucchni, tomatoes, eggplant, water, thyme, salt and pepper and brown for 4 minutes.
  • Cover and set to high pressure for 5 minutes.
  • Release the pressure using the quick release method.
  • Unlock and remove lid, add the basil and parsley.
  • Adjust seasonings to taste.

  1. First time using my new crockpot express. I have dying to make ratatouille since my last old school crockpot died. Found your recipe, I followed everything even though I hadn’t a clue how or when the pot was ready. What normally would have taken 3-4 hours, took 25 min. That included prepping all the veggies. Served it over Barilla pronto rotini with a sprinkle of locatelli cheese. Oh my word, the smell brought back warm memories of my mom cooking this for my sister and I and later, I would cook this for my daughters who loved it over rice with chicken. I did take the lid off to allow the liquid to cook down to make a yummy sauce. Can’t wait till tomorrow when all the flavors have cooled and had a chance to intermingle. A scoop of that over some hard crusty bread will be lunch tomorrow. Thank you for the recipe. Dachsiemama
     
  2. Excellent recipe... Only additions were more garlic, 2C fresh tomatoes, chicken broth (1/2 C) and 1/4 C red wine, used to rince out small 6 Oz? sized tomato sauce, and added some fresh basil and oregano. Served with Sweet Italian sausage and Penne pasta from this site . It turned out a little saucey with my additions, so served it with a slotted spoon in a pasta bowl alongside the Penne and sausage. Guests went back for seconds! Thanks!

<p>I will start by saying that I love to cook and also love collecting recipes so I am very happy to have joined Recipezaar and really enjoy going through all the recipes that have been generously posted by other members. <br /> <br />I only cook for myself during the week but on weekends I usually have 2 meals to prepare for family and friends. I am on WW and try to keep my choices in line with WW but will indulge myself and save a few recipes that don't fit in with WW for special occasions. My favourite food is curry and am always on the look out for a new curry <br />recipe. <br /> <br />I love to garden as my Zaar name would indicate, I grow tomotoes and herbs but space is limited so mostly I have perennial and annual flowers and plants. <br /> <br />My baby is a lovely little ShihTzu X Poodle named Rosie, she is my only child so of course is spoiled rotten.
