  • In a large bowl combine both heads of lettuce, green onions, bell peppers and cranberries.
  • Saute ramen noodles, seasonings from packets, sesame seeds and almonds in 1 stick butter. Stir constantly for 2 minutes over medium-low heat. Watch carefully,.
  • do not burn!
  • Drain on paper towel. Set aside to cool.
  • Dressing: (can make ahead).
  • Put in jar and shake very well to mix.
  • To serve:

  • Toss salad mixture with noodle mixture.
  • Drizzle dressing over the salad, toss to coat.
  • Serve immediately.
  • Serves 12-15.

  1. I made this yesterday for a party. The lettuces and colored peppers at the grocery happened to be quite large so the salad turned out HUGE. Not that I'm complaining; it was DELICIOUS and a great hit. I took the advice of others and cut the sugar back to half a cup, and I also cut back on the butter a bit for stir-frying the noodle mix and it worked just fine. Oh, and I used two green bell peppers instead of just one. A great recipe and we definitely won't be waiting for a party to make it again.
     
  2. As promised this is a pretty salad and I thought the crunchy topping awesome. What a great use for ramen noodles! I found the dressing a little lacking in mustard flavor, but I reduced the amounts to make a salad for 4. It was overly sweet, but definitely worth trying again because we loved the salad & topping. Thank you for sharing the recipe!
     
  3. Just made this for a large casual dinner party. I must admit, I was hesitant to purchase the ramen noodles, but went for it none the less and it added a nice crunch and extra flavour (I'll continue to look for a healthier alternative in that respect). I doubled the recipe and used olive oil and veg ramen and about 1/2 as much sugar as in the recipe. It was a hit and there were NO leftovers!!! Thanks!

  5. Great salad. Fantastic colours from the bell peppers, crunch from the noodles and sweetness from the cranberries and the mustard dressing. A simple salad with great flavours. I used gluten-free noodles to make the salad suitable for my diet. This salad was a good chance for me to use my new V-slicer. Thanks for a great recipe :)
