Pretty Fruit Pizza

"This is one of my favorite desserts because the colors are so beautiful and the taste amazing. I have still not really perfected the art of putting the glaze over it however but I find if you put lots on there isn't an issue. Be careful the colours don't run together if you are using a type of fruit with juice (ie. defrosted strawberries)"

  • Base:

  • Mix the ingredients until smooth. Pat the mixture onto an appropriate baking dish like a pizza pan, cookie sheet, or decorative oven safe dish.
  • Bake in preheated oven at 350°F til lightly brown. Set aside to cool.
  • Sauce:

  • Cream together ingredients and apply evenly on base when cool.
  • Glaze:

  • Mix cornstarch and sugar together and then put in heavy bottomed sauce pan. Slowly add pineapple and lemon juice and mix together. Bring to light boil and turn down and mix until thickened. Stir with a whisk most of the time to avoid scorching the sauce. The consistency should resemble syrup. Let cool.
  • Decoratively arrange various fruits on the "sauce" covered base. My favorites are strawberries, blueberries, peach, banana and kiwi. Choose brightly colored fruits for full impact.
  • At this point I usually use a tablespoon and delicately poor some glaze onto the pizza while using a rubber pastry brush to spread it. This is the most difficult part as the cream cheese sauce and sometimes the juice of the fruits will run together on the glaze and not look that nice. This is a somewhat time consuming task however the end product is beautiful and great for special occasions.

  1. This is a beautiful and delicous dessert that, if baked on a pizza pan, will serve at least 8 generously. I tried a dollop of whipped cream to serve.

Cooking, food, food preparation, different ingredients and tastes are all things that I am fascinated by. I absolutely love cooking and find making a big meal incredibly relaxing. I love to prepare food for others and entertain. I am fortunate to have many friends who are willing to try all my culinary experiments. As an only child I have been blessed with the opportunity to experience many adult flavors and tastes at a young age. This has instilled in me my love for gourmet foods, which I consider one of life’s greatest luxuries. My favorite food as a child was escargot (and still reigns number one on my favorite food list today) which leads me to my conclusion that anyone can really like anything, you just have to try it. Because of this I try everything once. The world of flavor is so vast that I don’t want to miss out on anything that I may truly like, but was too "chicken" to try. (and yes, I have tried chicken feet) Although I do love fine foods I am not a “food snob” a nice squished grilled cheese made with Wonder Bread and Cheeze Whiz is on my top ten favorite foods list too. As far as food types are concerned I really do like just about everything, especially ethnic food. I am enjoying alot of Thai and Arabic food right now and also favour Greek and South American cuisine also. Yumm!
