  1. Preheat oven to 350 degrees F(200 degrees C). Coat muffin tins with muffin baking cups. In a small bowl mix together flour, baking powder, salt and poppy seeds. In a medium bowl beat egg, egg white, sugar and oil until smooth. Add the applesauce and mix until well blended. Slowly add flour mixture to medium bowl until all ingredients are blended together. Spoon batter into muffin cups (two-thirds full) and bake 10-15 minutes until light brown and tooth pick inserted in the middle comes out clean. Remove from the oven and cool muffins in baking tin for 10 minutes. Enjoy.
