Prosciutto Bites

"The kids and I went on a sampling spree one time in Sam's Club. One gentleman was offering up these little bites of heaven. All three kids got up the nerve to try them. And all three kids wanted to go back for seconds! First time we had ever had prosciutto and we loved it. The gentleman was so impressed that all three of my kids enjoyed it, that he gave me the recipe so that I could make my own! Whether it is a fancy holiday party or a Superbowl party, these would go great!"

directions

  • You want all the ingredients (other than the prosciutto and black pepper) to be around the same size.
  • I buy the slices of havarti from the deli and cut them into four long slices. Then cut those strips in half widthwise. I then put two pieces into a roll.
  • Cut the pear into quarters and core it. Then cut each quarter in four long thin slices. I end up with a few slices leftover but I consider those treats for the cook!
  • At one end of a slice of prosciutto, place a cheese slice, a pear wedge and a pepper stick.
  • Sprinkle with pepper.
  • Roll up slices and secure with toothpick if necessary. I find that the meay sticks to itself usually well enough to not need toothpicks.
  • After they are rolled up, you can cutthem in half if you would like a smaller bite.
  • Refrigerate prior to serving and keep cool during serving.

Questions & Replies

  1. Can I use something else in place of Pears?.....Not sure this would go over with the family....Thanks..

  2. Do the pears change color from sitting out? Do I need to soak them in lemon juice first to prevent oxidation?

  3. What wine pairing would you recommend? The havarti makes me think a merlot, but the pear makes me think riesling.

  1. I make them every year for the holidays.. I substitute Granny Smith Apple instead of the red pepper.. they are always a big hit!!

  2. Sometimes humble ingredients make the biggesst impact, as is the case here. These are wonderful! The saltiness of the prosciutto contrasts nicely with the sweetness of the pear. The pepper(s) add another flavour level, and the cheese seems to balance-bring it all together. (I had to use mozarella in place of the havarti=all I had on hand today). A definite make again crowd pleaser, or reduce the recipe for just "2" . Made for Let's Party-Dec-'09

  3. Definately 5 star - Wonderful blend of flavore - The sweetness of the pear, crisp red pepper , flavor loaded cheese (I used light Havarti) wrapped in Prosciutto - They all melded together for a real taste treat. One problem I had was that the prosciutto was quite dry - Not a problem with the recipe but one with my deli and this made it quite chewy. Definitely a do again recipe Perfect with my Sunday Mart Mart
