24 Crostini
ingredients
- 1 loaf long country bread, such as Pugliese
- extra virgin olive oil
- salt & freshly ground black pepper
- 1 cup parmesan cheese
- 1 small red onion, minced
- 2 tablespoons champagne vinegar
- 1 ripe cantaloupe
- salt
- 2 tablespoons minced flat leaf parsley
- 12 slices prosciutto, sliced in 1/2 crosswise
directions
- Preheat the oven to 375 degrees F.
- Cut the loaf of bread in half crosswise, then cut each half lengthwise into 1-inch thick slices. Lay the slices in a single layer on baking sheets. - Add the diced melon to the onions, season with salt and stir to blend together. Add the minced parsley and stir to combine.
- Wrap the end of each crostini with a piece of prosciutto.
- Arrange on a platter and spoon a tablespoon of melon salsa on each and serve. Serve remaining salsa on the side.

I live with my husband, four cats, and a sweet mutt named Jada in Scarborough, Ontario, where I work as an elementary school administrative assistant. I have a 31 year old daughter who lives with her boyfriend in nearby Don Mills, along with my sweet granddogs, Frankie and Turbo. I would have to say that my passion is animals, since I have so many of them!

If I had a month off work to do what I please, I would first catch up on my sleep and then just have fun - see a few movies and maybe take a couple of short trips - something that wouldn't break the bank - lol!
