  • In a large skillet, heat oil over high heat.
  • Add steak, onion, and garlic.
  • Saute 5 minutes, or until meat is browned, stirring frequently.
  • Add yellow squash and saute 3 to 4 minutes, stirring frequently.
  • Add beans, tomatoes, and black pepper, mix well.
  • Cook 3 to 4 minutes, or until heated through.
  • Just beore serving, stir in spinach and cook 2 to 3 minutes, or until spinach wilts.
  • Sprinkle with Paresan cheese and serve.

  1. Flavor was lacking here. After adding some spices it wasn't bad. You could make this a little different each time you make it. Thyme worked real well.
     
  2. This has become a family favorite. Instead of parmesan, I use feta cheese, which accents the natural flavors of the dish. I did try thyme as Robbin suggests, but like it better with just the feta added.
