  • In a large dutch oven, brown pork in batches in oil over med. heat.
  • Add remaining ingredients.
  • Bring to a boil.Reduce heat;cover and simmer for 1 hr, until pork is tender.

  1. Great stew! I used a 3 pound pork tenderloin. I only used one can of corn per landlocked's recommendation and I thought it was the perfect amount. I did add a little thickener to the stew to thicken it up a bit. Perfect amount of herbs & spices. Made for PRMR tag.
     
  2. This was very good and a nice change! The only ingredient change I made to the recipe was to add a chopped onion, because this recipe seemed that it just needed one! After browning the meat, onion and celery, I added all of the other ingredients with exception of the potatoes and let simmer for an hour to give the stew more time for the flavors to meld (I always cook my stews for at least 2 hours). I didn't add the potatoes so that they wouldn't get mushy. I then added the potatoes and simmered it for another 45 minutes. My husband thought there was too much corn, which I tend to agree with. Maybe next time (yes there will be a next time!) I would add only one 15 oz. can of corn. I also think this might be good with some lime juice added as well. Made for PAC Spring 2010.

My Family and I moved to South Africa at the beginning of 2007 to be missionaries. My Husband is the Pastor of a church in Eden Park, a township in the Jo'burg area. We are having a great time. My kids love it (3 of them, 1 born here). We have got to do many exciting things( pet lion cubs, feed giraffes, eat Zebra(gross!)and other meats(Warthog was surprisingly the best, go figure) and swim on a beach with penguins, to name a few). I have always loved to bake but just got into cooking since moving over here. There were a lot of things I couldn't find over here(and still can't) that we were wanting so I started searching for good recipes for everything from sausage, salad dressing and root beer,to enchilada sauce, Macayo's baja sauce(posted), and Applebees hot wings! A fellow missionary turned me on to this site and My husband got me a membership for this last birthday. I am loving it!
