- 30 ounces shredded potatoes
- 2 cups onions, diced
- 1 cup green bell pepper, Diced
- 5 ounces ham, Diced
- 6 eggs, Scrambled
- 1 teaspoon salt
- 1 teaspoon pepper
- 10 tablespoons oil
- 6 ounces grated cheddar cheese
directions
- Heat 2 Tbps of Oil.
- Add potatoes in single layer and let cook until brown, then flip.
- remove potatoes and repeat steps 1 and 2 until potatoes are all cooked.
- Heat 2 Tbps of oil.
- Add eggs and slowly mix until cooked thoroughly.
- remove eggs.
- Heat 2 Tbps of Oil.
- Add ham, onions and green peppers, cook until onions clarify.
- add back into skillet potaotes and eggs.
- Cover with cheese and serve.
