Pulled BBQ Sandwiches

"I developed this recipe because I needed something to do with a roast because DH does not like it prepared the traditional way! He couldn't stop eating them. They are great to make ahead as they taste better the next day."

  • Preheat oven to 375°F.
  • Season roast with pepper and Greek seasoning on both sides place in a baking pan cover with foil and place in preheated oven for 1 hr or until no longer red in the middle.
  • Remove the roast from the oven and let it rest for 5-10 minutes.
  • Place roast in ziploc bag and pound with meat hammer to loosen then remove from bag and pull apart with your hands (remove the fat). Set aside.
  • Heat place BBQ sauce in medium or large sauce pan and mix with beef stock.
  • Once mixed add pulled roast and simmer for minimum of 10 minutes.
  • While roast is simmering toast your buns and prepare your sides!
  • Enjoy
  • Try substitutions such as chicken or turkey or add peppers, coleslaw, etc!
