Pulled Chicken on a Ciabata Bun

- 2 cups chicken stock
- 3 large boneless skinless chicken breasts
- 4 slices bacon
- 1⁄8 chili pepper, finely chopped
- 1⁄4 large red onion, chopped
- 1⁄2 cup brown sugar
- 1⁄4 cup tomato paste
- 3 large minced garlic cloves
- 2 1⁄2 tablespoons Worcestershire sauce
- 1 1⁄2 tablespoons liquid smoke
- 1 teaspoon chili paste
- 1⁄8 teaspoon cumin
- 1⁄2 yellow pepper
- 1⁄2 red pepper
- 1⁄2 green pepper
- 200 g white mushrooms, sliced
- 1⁄4 teaspoon garlic salt (adjust to taste)
- 1⁄2 teaspoon garlic (a seasoning called garlic plus, adjust to taste)
- 1 teaspoon dark soy sauce
- smoked applewood cheddar cheese (I think about 500g)

directions
- Bring the chicken broth to a slow boil in a shallow pan.
- Add chicken breasts and simmer both sides, about 5-6 minutes each side.
- In a bowl, add ingredients from brown sugar to cumin and set aside.
- Remove chicken and set aside.
- Add bacon, chili pepper and onions to the broth and simmer over low heat for 10 minutes.
- In a separate pan, sautee mushrooms in butter, garlic salt, garlic plus, and soy sauce, place in oven on warm.
- In a separate pan, sautee the peppers in butter, place in oven on warm.
- Once chicken has cooled to the touch, pull it apart with a dull knife, should pull apart in strands.
- Add chicken and mixture in bowl to the broth and simmer for 10 minutes.
- Add flour to chicken until mixture is thickened.
- Slice buns in half.
- Spoon chicken onto buns, top with sauteed peppers, mushrooms and cheddar.
- Place bottoms onto pan and broil until cheese is melted and just starting to brown.
- Remove and serve.
