- 1⁄2 cup butter, softened
- 1 cup sugar
- 1 cup brown sugar
- 1 lb canned pumpkin
- 2 teaspoons vanilla
- 4 eggs
- 1 1⁄2 cups flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄4 teaspoon salt
- 2 1⁄2 teaspoons pumpkin pie spice
- 1 cup raisins
- 1⁄2 cup chopped nuts

Cream Cheese Frosting
- 4 ounces softened cream cheese
- 1 teaspoon vanilla
- 1⁄4 teaspoon salt
- 4 cups powdered sugar
- 1⁄3 cup milk
directions
- In a mixing bowl, stir together the butter, sugars, pumpkin, vanilla, and eggs; beat well.
- Stir in remaining ingredients.
- Pour into a greased jelly roll pan.
- Bake in a 350° oven for 20-25 minutes or until top springs back when touched.
- Let cool.
- To make cream cheese frosting: beat all ingredients together.
- Frost cooled pumpkin layer; let cool completely and cut into bars.
- Number of bars depends on how big or small you cut them.
