- 3 cups sugar
- 1⁄2 cup vegetable oil
- 1⁄2 cup applesauce
- 4 eggs
- 16 ounces fresh pumpkin (can used canned)
- 2 cups flour
- 1 1⁄2 cups whole wheat flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1⁄2 teaspoon clove
- 1⁄2 teaspoon allspice
- 1⁄2 teaspoon ginger
- 1⁄2 cup water
directions
- Preheat oven to 350 degrees.
- In a large bowl combine sugar, oil, applesauce, and eggs.
- Add pumpkin and mix well.
- Combine dry ingredients, then add to the pumpkin mix alternating with the 1/2 cup of Water.
- Pour into greased loaf pans.
- Bake at 350 for 60-70 minutes if using two loaf pans. If using mini loaf pans bake for 25-30 minutes. Bake until bread tests done. Cool in pans for 10 minutes before removing bread and placing on wire racks.
