  • Using an electric mixer at medium speed, combine the eggs, sugar, oil, vanilla, and pumpkin until light and fluffy.
  • Stir together the flour, baking powder, spices, salt and baking soda.
  • Add the dry ingredients to the pumpkin mixture and mix until thoroughly combined and smooth.
  • Spread batter into a greased 13 x 9-inch baking pan.
  • Bake 35 to 40 minutes, or until a toothpick inserted in center comes out clean.
  • Cool completely before frosting.
  • To make frosting, combine the cream cheese and butter in a bowl with mixer until smooth. Add the sugar and mix until combined. Add vanilla and mix again. Spread onto cooled cake.
