Pumpkin & Chive Damper

"Damper is an Australian Bread. A very quick & simple side to make using mashed pumpkin. A beautiful golden colour when cooked, best served warm straight from the oven but will keep for a few days wrapped in plastic or an airtight container."

  • Preheat oven to 220.C.
  • Sift flour into a bowl, add butter & rub in using fingertips.
  • Blend in pumpkin, cheese, chives & seasonings. Add combined egg & milk, mix quickly to a soft dough.
  • Turn onto a lightly floured surface & knead lightly, form into a round.
  • Place on a lightly greased baking tray and brush with a little milk, sprinkle with extra cheese.
  • Bake for 10 mins then reduce heat to 180.C, bake for a further 15-20 mins or until damper sound hollow when tapped.
  • Serve warm & buttered.

  1. mandy, this damper is just fantastic!!!! It is easy to make, has a wonderful crunchy crust with a lovely soft interior and such a great taste! Mmmm! The chives and the pumpkin pair really well and the cheese adds a lovely gooey goodness. I made my own pumpkin mash out of fresh hokkaido, so that it was rather wet and I left out the milk to compensate for that. The dough was easy to work with and I will surely make this again! THANK YOU SO MUCH for sharing this winner with us! Made and reviewed for 1-2-3-Hit Wonders June 2010.
     
  2. Great bread Mandy! I have had damper bread just once prepared by an Australian so was eager to try your pumpkin-cheese-chive combination. It was a winner. I slathered it with butter and almost ate the entire loaf myself (lol). Thanks!

Melbourne I live on a 5 acre property in the Dandenong Ranges Victoria, Australia, having moved from the burbs when I became pregnant with my now 15 year old daughter Alyssa. Once my daughter was born I became a stay at home mum as I couldn't bear the thought of putting her in daycare. She is the light of my life, I never imagined myself as a mum when younger but now wouldn't have it any other way. Alyssa was made a big sister on the 19th April 2010 when our cheeky little boy Blake was born. I love cooking and experimenting with new recipes so quickly become addicted to Zaar as it was previously known & still use it regularly. In addition to being my kids taxi :lol: I also spend my time, reading, gardening and of course shopping. I'm lucky enough that we have the space & so love growing our own fruits, vegies & herbs, this also means we have plenty of room for animals & at the moment have 2 dogs, Max, a Jackshund who's 6, Fletcher, a Kelpie who's 4, 6 cats Snowpea, Fergus, Ginger, Tango, Annie & Cookie, 4 chooks & 2 Ducks. As well as our pets, we also have a lot of native animals around our area, we have kangaroos, wombats, echidna's, possums as well as rosella's, galah's & Cockatoo's hence the name of where I live..
