ingredients
- 1 cup butter, softened
- 3⁄4 cup brown sugar, packed
- 3⁄4 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 2 cups flour
- 1 cup quick-cooking oats
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 cup canned pumpkin (not pumpkin pie)
- 1 1⁄2 cups chocolate chips
directions
- Cream butter and sugars.
- Beat in egg and vanilla.
- Combine flour, oats, baking soda,cinnamon, and nutmeg.
- Stir into creamed mixture alternately with pumpkin.
- Fold in chocolate chips.
- Drop by Tbsp onto greased cookie sheets.
- Bake at 350 degrees for 12-13 minutes or until lightly browned.

Made these to take to work. They were a huge hit - even with me!! That's saying something, as usually if it's not chocolate, I'm not interested. These were seriously AWESOME!! The changes I made were to omit the butter and use applesauce instead (VERY nice and moist cookie!!), added nutmeg, and instead of chocolate chips, I added half butterscotch chips and half white chocolate chips. Making them again right now as my DH and DS have not stopped grousing about how they only got a couple! Great fall recipe!
