  • Cream together the first 6 ingredients. Add dry ingredients and mix well.
  • Drop by the teaspoonful onto greased cookie sheets. Bake 12-15 minutes at 375°F.

  1. Please believe me when I say that I am not really a fan of pumpkin-however I am rather partial to baking with vegetables,and so was rather keen to give this recipe a go. Well....I am SO glad that I decided to try this recipe! The recipe itself is very simple to follow,and the resulting cake like cookies are just delicious and wonderfully aromatic. I halved the mixture,leaving some plain and adding chocolate chips to the other half-I have to admit that the chocolate chips just had the edge!! A definate keeper!! Made for PRMR.

  3. These are fabulous! I used butter, 1/2 sugar 1/2 Splenda, 2/3 cup egg whites, a 15 ounce can of pumpkin and 1/2 a cup of whole wheat flour with 2 cups of white flour. Everyone loved these!
