  • In a medium mixing bowl, beat shortening with an electric mixer on medium to high speed for 30 seconds.
  • Add the granulated sugar, brown sugar, pumpkin pie spice, baking powder, and baking soda.
  • Beat until combined, scraping sides of bowl.
  • Beat in the egg and pumpkin.
  • Beat in as much of the flour as you can with the mixer.
  • Stir in remaining flour.
  • Drop dough by a rounded teaspoon 2 inches apart onto an ungreased cookie sheet.
  • Bake cookies in a 375 degree F oven for 8 to 10 minutes or until tops seem firm.
  • Transfer cookies to a wire rack; cool.

  1. I took these delightful pumpkin cookies to a "ladies tea" at our church. Everyone loved them and they were one of the first cookies to disappear. So according to the church ladies, they say, "5-stars".
     
  2. I made these cookies for my daughters Kindergarten Thanksgiving Feast. I put a small dolop of whipped cream on each one and the kids loved them. Four moms called me today asking for the recipe. We will be making these again.
     
  3. This was a very easy recipe to make. It is not very sweet even though it calls for a cup of sugar total. It tastes a lot like pumkin bread. This is a good recipe if you are looking for something that isn't too sweet.
     
  4. Nice and easy to make...I added 1 cup mini chocolate chips to entice my 9-yr old son to try something new...and they were delicious!
     
  5. These were different. Tasted like pumpkin pie. I did use 1 cup light brown sugar. I also substiuted 1/2 of shortening with applesauce & margaring. A little bland and I used 2 tsps. pumpkin pie spice. I think it needs alittle of some spice. I omitted baking sode, I really don't like it, and increased baking powder by 1/2 tsp. Maybe cinnamon. I also added 1 cup of chocolate chips, which was alittle too much. I also cooked them at a lower temperature and for longer (300 for about 25 minutes.) Nice cookies, but I am not really crazy about them and probably won't make again.
