  • Combine pumpkin and egg, stir in flour, cinnamon, baking powder, sugar, salt and juice.
  • Heat oil in a shallow pan and drop spoonfuls of the mixture into the oil, fry till golden then turn and do other side, drain on paper towels and serve hot sprinkled with cinnamon sugar.
  • Lovely with ice cream!

  1. I've given this a four star review, even though my own was a disaster. I can't get good pumpkin here so used butternut squash. I think it was too wet. Also, I didn't use enough oil and so they didn't cook through, although they were cooked on the outside. However, the taste was really good and deserves four stars. I'm going to make them again.
     
  2. I think using canned pumpkin was not a good idea for this recipe... it ended up a little sour and more vegetable-tasting than dessert-like (I don't know how else to describe it). Next time I will definitely use a real pumpkin and take the time to make it from scratch.
     
  3. The pumpkin drew a little too much water - so I needed to add an extra table spoon of flour. This was not because of an error in the recipe - but because of the pumpkin that was bought. Once the consistency was correct they turned out well and drew compliments galore!

I live at the Coast and have done so for the last 5 years,its certainly a slower pace of life here than when we lived in the city. There is something very restful about living so close to the Sea even the storms are spectacular to watch.One of My wishes is to spend a weekend in a Light house,preferably in rough weather! I,m also *Mum* to 4 dogs(all girls!)Millie the boxer,Jessie the cross border collie who is slightly mad to say the least!and my 2 little Jack Russells Molly and Mandy who have me running about all over the place I wish I had their energy!I,de bottle it and make a fortune!
