  • Beat eggs slightly.
  • Add sugar, oil and pumpkin.
  • Beat thoroughly.
  • Add flour, cinnamon, baking soda, baking powder and salt to creamed mixture.
  • Blend until smooth.
  • Stir in raisins.
  • Fill muffins tins 2/3 full.
  • Bake at 400 degrees for 15 minutes.

  1. Flavor was nice and these came out great. However, I hadn't looked closely at the recipe before I started, and almost quit when I saw how much oil went into it...then I checked the calorie count. YIPES! A meal's worth of calories in one muffin!
     
  2. These turned out great! I think the flavor is developed best when you make these at night and let them sit and serve them in the morning. These were a big hit in our house!
     
  3. Nice recipe! I used it to make 12 supersized muffins, which were moist and yummy! The only change I made was to leave out the raisins -- my family just isn't into baked goods with raisins for some reason. I think these would also be quite nice with chopped nuts added in. I'll be making these muffins again!
     
  4. I love these muffins! I use about 1 C whole wheat flour with 2 C white flour and can't tell the difference. I like baking them in mini muffin tins and serving them at brunch (that is if there are any left over after my 6 and 10 year old picky boys get to them).
     
  5. These turned out really nice. I added some chopped candied ginger as well.
