  • Heat oven to 400°F
  • Grease bottom of muffin cups.
  • Mix all ingredients and stir until flour is moistened and mixed well.
  • Fold in raisins (or other).
  • Fill muffin cups 2/3 full.
  • Sprinkle a pinch of sugar over each muffin. Bake for 18-20 minutes.

  1. I have just discovered a new love for baking. Being fairly new to it, crazy recipies scare me. This one was perfect. Not only was it easy, but they turned out great. It took all of 2 minutes for my hubby (who doesn't eat anything sweet) to get into these muffins.Two days after making 2 dozen, not only were they gone, but ive had special requests for more.   3. I had leftover canned pumpkin, so I made these tonight. I used one cup of Libby's pumpkin and just a splash of milk to moisten it. It made fab muffins! Thank you.
     
  4. They were good,but not perfect. I will add a bit more cinnamon next time to see if it spruces it up.Also,if you use chocolate chips...you might want to use a tad less if getting a mouthful of chocolate is too intense for you! This is still something nice to take to Thanksgiving get-togethers.Perhaps use dried cranberries appropriate for that holiday.
     
  5. These muffins had great texture and were very moist, but they were a little bland. I wonder if adding cloves would spice it up a bit?

Tweaks

  1. This is the second time I have made these muffins this week. The first time I used soy milk and chocolate chips in place of the raisins. Today, I made them using evaporated milk and vanilla. I chose this recipe because there is only 1/4 cup of oil and 1/2 cup sugar. This is a relatively low amount of oil and sugar compared to most recipes. Let me say that it does not compromise the flavor or texture at all! Thanks so much d-licious! KCShell
     
  2. Great recipe! I don't like nutmeg so I just added additional cincinnom. Used vanilla sugar instead of sugar. Thanks for sharing.
