Pumpkin Oatmeal

"This is a nice way to sneak some fiber into your diet and also have a healthy breakfast. I do not make this oatmeal too sweet, but you could adjust the sugar/splenda amounts if you prefer sweeter oatmeals. This would be great with some chopped walnuts or pecans also."

  • In a bowl, combine all ingredients.
  • Add some chopped nuts, if desired.
  • Microwave oatmeal for 2-3 minutes depending on your microwave.
  • Be careful of the oatmeal boiling over.
  • This could also be done on a stovetop, campfire, or in a slow cooker.
  • Give your oatmeal a good stir and enjoy with some flavored coffee.

  1. This was a nice, filling breakfast that I really enjoyed. I didn't sweeten it beyond the brown sugar because I don't like Splenda and didn't think it needed to be sweeter. I used milk instead of water for protein and chopped up a pear and throw it in. I'm glad, because I was a bit bored by the end. Still, it was good!
     
  2. Great flavor! I used half water and half milk, didn't add the sugar substitute and added apples. After it cooled for a few minutes, I added 1/2 cup of vanilla yogurt.
     
  3. Made this for my son and I this morning. It was enough for both of us. I followed the recipe as written but used Splenda brown sugar blend and used more then the recipe called for as my son didn't think it was sweet enough. This cooked up fast in the microwave. We both enjoyed it.
     
  4. Did this overnight in my crockpot using steel cut oats. I didn't use sugar as I was on a Daniel Fast, but put in raisins for the sweet I was missing. Was good, probably not sweet enough for most people... plan on making it again this week with the brown sugar or stevia. I love how I can put it in the night before and it's ready for me in the morning (I use a really small crockpot for two people).
     
  5. This is an excellent recipe! I'm crazy about all sort of dried fruit therefore I added in raisin, sultanas and cranberry. The mixed fruit taste is fabulous!   2. My first time having pumpkin with oatmeal and it was very good. I used less brown sugar and more splenda and a mix of my spices since I was out of pumpkin pie spice. I love getting more pumpkin in my diet since it is so good for you. Oh, I used almond milk instead of water. (Just because I had some that needed using up). Thanks for posting Amber, this goes in my breakfast rotation.
     
  3. I really liked this oatmeal. It isn't too sweet yet it is just sweet enough. I used about 3/4 tsp of granulated sugar in place of the splenda because artificial sweeteners tend to give me migraines. Next time I will try this with 1/8 cup of raisins as well- cranberries might be good too.
     
  4. This is one of my favorite fall oatmeals. I made mine with brown sugar twin instead of regular brown sugar. Some other nice variations are a pinch of dried ginger in the oatmeal or a sprinkling of chopped crystalized ginger on top after preparation.

<p>I live in Arizona. Cooking is a relaxing hobby and I love finding healthy meals that have a lot of flavor and heart to them. Recipezaar has not let me down. I could not possibly pick a favorite cookbook. I love searching used bookstores for old cookbooks. I collect other cookbooks that look intresting or have healthy dishes. My collection is modest, but I love it. Also, I love the Taste of Home magazines. They have real food that real people cook. I would have to say my pet peeves are people who drive while talking on cell phones and people who cannot spell potato. It is p o t a t o not p o t a t o e. There is no e unless you are spelling the plural form of potato which is potatoes. I frequently see that word mispelled in recipes and it makes me think the recipe is somehow devalued because of the spellings. The Zaar system of ratings works for me. I do try to explain myself in my reviews and welcome any questions or comments on what I have said. It is not my intention to be mean-spirited if I did not like something (it is rare for me not to like a recipe though):) Recipezaar brings such a nice element to my life and I feel it has been enriched by the wealth of knowledge both in everyone's contributed recipes and on the forums. Also, it is such a nice feature that you can log on practically any time to get help with a recipe or ingredient that might otherwise be imtimidating to prepare by yourself.</p>
