- 2 cups all-purpose flour
- 3 tablespoons brown sugar
- 2 1⁄2 teaspoons baking powder
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon ground cinnamon
- 1⁄4 teaspoon ground nutmeg
- 1⁄4 teaspoon ground cloves
- 1 1⁄2 cups whole milk
- 1⁄2 cup pumpkin puree
- 2 large eggs
- 2 1⁄2 tablespoons butter, melted
- 2 tablespoons oil, for cooking
directions
- Whisk together the flour, sugar, baking powder, vanilla, salt and spices in a medium bowl.
- In a separate small bowl, combine the milk, pumpkin, egg and butter. Stir into the dry ingredients and mix until just combined. The batter should be nice and smooth.
- Heat a greased skillet or griddle over medium heat (325˚F for the griddle). Grease the griddle or pan with ** oil. Use a ladle to pour the batter on the griddle. When bubbles start forming on the top, carefully use a spatula to flip to the other side. Cook for a few more minutes, until nice and golden brown. Re-greasing the griddle or pan as needed; repeat with the rest of the batter.
- Top the pancakes with powdered sugar.
