  1. Whisk together the flour, sugar, baking powder, vanilla, salt and spices in a medium bowl.
  2. In a separate small bowl, combine the milk, pumpkin, egg and butter. Stir into the dry ingredients and mix until just combined. The batter should be nice and smooth.
  3. Heat a greased skillet or griddle over medium heat (325˚F for the griddle). Grease the griddle or pan with ** oil. Use a ladle to pour the batter on the griddle. When bubbles start forming on the top, carefully use a spatula to flip to the other side. Cook for a few more minutes, until nice and golden brown. Re-greasing the griddle or pan as needed; repeat with the rest of the batter.
  4. Top the pancakes with powdered sugar.
