Just recently got sent some pumpkin pie spice in a regional swap & thought I'd give this a go, I combined methods 1 & 2. This was nice but I think the ginger in the spice was a bit too dominant for my tastes, (not really a ginger fan> I love the idea of spiced coffee but not with this particular spice too much. Good to try though, thanks for posting!

This is delicious! I ended up combining the two recipes, since I was too lazy to dig my espresso machine out of the basement, but I wanted to find a use for the DaVinci pumpkin pie syrup I bought recently. I filled a mug half full with coffee and topped it off with foamed vanilla soy milk, then added about 1 1/2-2 Tbsp syrup. It doesn't taste exactly like the cappuccino I used to get at a local gas station, but it's just as good. Thanks for sharing this!
