- 236.59 ml flour
- 118.29 ml whole wheat flour
- 78.78 ml oat bran
- 44.37 ml brown sugar
- 14.79 ml baking powder
- 1.23 ml cinnamon
- 1.23 ml ginger
- 0.61 ml nutmeg
- 0.25 ml clove
- 1.23 ml salt
- 314.66 ml milk
- 177.44 ml pumpkin puree
- 78.78 ml vegetable oil
- 44.37 ml honey
- 3 egg whites
directions
- Preheat waffle iron.
- In a mixing bowl, combine flours, oat bran, brown sugar, baking powder, spices, and salt.
- Separately, mix together milk, pumpkin, oil, and honey until smooth.
- Add pumpkin mixture to dry ingredients, mixing well.
- In another bowl, beat egg whites until stiff but not dry; gently fold into batter.
- Pour 1 1/4 cups batter onto greased waffle iron and cook until waffle is golden and cooked through.

These were hard for me to rate. They tasted wonderful and were easy to make, but they didn't hold together well; even with lots of cooking spray on the iron, they stuck to the top and bottom halves of the waffle iron and we had to scrape them off to eat them, but they were yummy!! We topped them with Cool Whip, chopped walnuts and syrup. The sticking problem could be because I didn't have any oat bran. I'd like to try them again (with all ingredients) and see what a difference it makes.
