1 cake roll
ingredients
- 3 eggs (beaten)
- 2⁄3 cup pumpkin
- 1⁄2 teaspoon salt
- 1 teaspoon ginger
- 1⁄2 teaspoon nutmeg
- 2 teaspoons cinnamon
- 3⁄4 cup flour
- 1 teaspoon baking powder
- 1 cup chopped nuts
- 1 cup sugar
- 1 teaspoon lemon juice

Filling
- 6 ounces cream cheese
- 1 cup powdered sugar
- 4 tablespoons butter
- 1⁄2 teaspoon vanilla
directions
- Combine ingredient,fold in flour,baking powder,and nuts last.
- Put in a greased and floured 18x10 jelly roll pan.
- Bake 375* for 15-20 minutes.
- Flop out on a dish towel,sprinkle with powdered sugar, roll up and let cool.
- Filling: Mix until smooth.
- Unroll cake and spread with filling.
- reroll and chill.
- Slice to serve.
- freezes well.
