- 30 ounces pumpkin (if pumpkin powder 1 part to 2.5 parts water by weight)
- 24 ounces chicken broth
- 3 tablespoons butter
- 1 1⁄2 cups cream
- 1⁄2 teaspoon coriander
- 1 1⁄2 teaspoons cumin
- 1 1⁄2 teaspoons curry
- 1 1⁄2 teaspoons garlic
- 1 1⁄2 teaspoons pepper
- 1⁄2 teaspoon red pepper flakes
- 3⁄4 teaspoon salt, kosher
- 1 teaspoon turmeric
directions
- Melt the butter in the broth. Add remaining ingredients. Mix to smooth. Bring to boil and then simmer for 10-15 minutes.
- Use a whisk or stick blender to insure a very smooth consistency.
