  • Mix flour, baking soda, baking powder, cinnamon, nutmeg ans ginger in one bowl.
  • Beat shortening and sugars together in a second bowl. Add the egg, vanilla and orange zest and beat until smooth. Stir in the flour mixture a little at a time. After adding about half, add the pumpkin filling and then stir in the rest of the flour mix.
  • Cover dough with plastic wrap and place in fridge for 3-4 hours to harden.
  • Drop about 1 tablespoon of dough onto cookie sheet, keep at least one inch apart. Bake at 375F for 10-12 minutes (until brown and fork comes out clean when inserted into the middle) Transfer to cooling rack immediately.

  1. I made these because I had a can of pumpkin pie mix I wanted to use up. The result, SUPER soft and yummy fall cookies with a light pumpkin flavor. Not too overpoweringly pumpkin but definitely enough to taste the fall goodness. Even my picky 3 yr old loves them.
