  • Chop up leeks, carrots, potatoes and sausage into 1 to 2 inch large chunks.cut up 1 - 4 cloves fo garlic in half, depending on how much you like garlic. Peel boiler onions.
  • Put chicken stock in soup pot along with all the above ingredients. Then take chunks of the roasted pumpkin (about 2-3 cups worth) and put it in the pot. Add water if the stock does not cover all the ingredients.
  • Turn burner on medium and cook until the potatoes are done.
  • Serves well with croissants or garlic bread.

I mean, HELLO; That sugar will still spike Blood Gloucose Levels!!!!
