  • Preheat the oven to 350°.
  • Line two baking sheets with parchment paper.
  • In a large bowl, whisk together the melted butter and brown sugar until smooth.
  • Whisk in the eggs, pumpkin puree, pumpkin pie spice, 1 teaspoon vanilla, the baking powder, the baking soda and 3/4 teaspoon salt.
  • Using a rubber spatula, fold in the flour.
  • Using an ice cream scoop or tablespoon, drop 12 generous mounds of batter, spaced evenly, onto each baking sheet.
  • Bake until springy to the touch, about 10 minutes.
  • Transfer to a rack to cool completely.
  • Meanwhile, using an electric mixer, cream the softened butter with the cream cheese.
  • Add the confectioners' sugar and the remaining 2 pinches salt and 1/2 teaspoon vanilla.
  • Mix on low speed until blended, then beat on medium-high speed until fluffy, about 2 minutes.
  • Spread the flat side of 12 cakes with the cream cheese frosting. Top each with another cake.

  2. They came out delicious, but very sticky after baked. Not sure why this happened.
     
  3. The recipe is yummy, I just had a problem figuring out if it was indeed supposed to be 6 Whoopie Pies or 12... Recipe said to put 12 ice cream scoops or Tablespoons on each baking sheet, which makes 24 halves, which makes 12 pies. I thought maybe each person eats 2 pies... I assumed that the 12 was an error after checking recipe again (said makes 6 pies, serves 6) and I put 6 mounds on each baking sheet... my halves were gigantic, ha! They did not bake in 10 minutes either, so I doubled the baking time which was perfect. Very delicious, just had to cut them in half. I'm guessing this makes 12 pies that do bake in 10 minutes. Very tasty! Thank you!
