  • Slice the pumpkin in half and remove the stringy fibers and seeds.
  • Peel and cut the pumpkin into chunks about 1x2 inches.
  • Boil in salted water until tender, about 12-15 minutes.
  • Finely grind the walnuts with the sugar.
  • Place the pumpkin pieces in a bowl and mash to break them up slightly, but still chunky Stir in walnut-sugar mixture.
  • Serve hot or cold.
