Cookies
- 2 cups pumpkin
- 2 cups brown sugar
- 2 eggs
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 teaspoon baking soda
- 3 cups flour
- 1 cup vegetable oil
- 1 teaspoon ground cloves
- 1 teaspoon ground ginger
- 1 teaspoon baking powder
- 1 teaspoon vanilla

Filling
- 1⁄2 cup butter
- 1⁄4 cup Crisco
- 1 cup confectioners' sugar
- 1 teaspoon vanilla
- 8 ounces marshmallow cream
- 1 tablespoon milk
- cinnamon
directions
- Cookies: Mix ingredients together in a medium size mixing bowl.
- Drop by teaspoonful on a baking sheet.
- Bake at 350 degrees for 8-10 minutes.
- Frosting: Mix the first 5 ingredients together with 5 oz margarine.
- Continue to add the rest of the margarine until light and fluffy.
- Once the cookies are cooled, frost the bottom of one cookie and place another cookie on top to make a sandwich.
