"A friend of mine from Panama made this delicious side dish & I was instantly hooked. I like it best when still warm. The beets in this recipe give it a beautiful purple color."

ingredients

6 potatoes
4 large carrots
4 stalks celery
6 eggs
2 lemons, juice of
15 ounces canned beets
¹⁄₂ teaspoon salt
¹⁄₃ cup mayonnaise
2 teaspoons relish

directions

boil potatoes, carrots, celery, and eggs on stove top until potatoes are tender.
peel & cut carrots, celery, eggs and potatoes
in large mixing bowl add all ingredients, salt to taste, I prefer less salt & mayonaise.
serve while warm.
