Quebec Salmon Pie

  • Grease individual casseroles or a nine-inch deep pie plate.
  • preheat the oven to 400°F.
  • Drain, flake and crush bones from can of salmon.
  • Bones are loaded with calcium and should never be discarded.
  • Combine potatoes and all other ingredients except salmon.
  • Place half the potato mixture in bottom of prepared casseroles or pie plate.
  • Cover with salmon.
  • Top with remaining potato mixture.
  • Prepare sufficient pastry, roll out and cover casserole or pie plate.
  • Cut vents for steam to escape.
  • Bake in 400 F oven for 25 to 30 minutes or until bubbly hot and crust is golden brown.
  • Hint: Serve with chili sauce or chutney.

  1. I didn't use the savory. Here in Quebec, the salmon is mixed in the mashed potatoes. For me that's a real salmon pie. When I made that recipe, I couldn't imagine doing a layer of mashed potatoes with the salmon on top. I mashed the potatoes with butter and milk and then added the salmon with onion. It turned out so yummy that way. Thanks Shirl :) Made for Cookbook tag game
     
  2. Bechamel with some frozen peas added. Mixture of canned and fresh King salmon sautéed with the onions before mixing with the mashed potatoes. Salt and pepper. Bottom and top crusts. Heaven in a pie plate. Keep it simple! My grandmother always did.
     
  3. This pie is tasty and easy to make. I think it would benefit from the addition of a sauce such as bechamel sauce as suggested in some of the other reviews. I also like the idea of mixing the salmon with the mashed potatoes rather than layering it.
     
  4. Yep what my family calls french comfort food! I too- drain the salmon and mix it with the potatoes. We also add a diced leek and thawed frozen peas.. - that and a nice green salad- there is nothing better
     
  5. I have made this pie quite a few times now and I'm finally rating it.....Excellent! My son is a big fan of anything with salmon in it and he loved it. Very easy to make and when I was pressed for time and had no leftover mashed potatoes I have even used store-bought prepared mashed potatoes. Delicious. Thank you Shirl.

Tweaks

  1. This is a traditional family food that was a staple in our household growing up. The only difference in ours is that we actually mix the salmon in with the potatoes. It infuses the entire pie with the flavor of the salmon and spices.... it's delicious! Now I want to go home and bake one!
     
  2. Instead of making a bechamel sauce, just add an undiluted can of cream of mushroom soup. Cream of celery or something similar would work, according to your taste. I make this in a prepared loaf pan, too, as Salmon Loaf. Peas can be put in, but, they look good on your plate next to a huge slice of pie!
