Quesadillas

"This is from one of my Mexican cook books, these cheese-filled tortillas are the Mexican version of grilled cheese sandwiches.serve them as soon as they are cooked or they will become chewy.try spreading a thin layer of your favorite Mexican salsa on the tortilla before adding the cheese,or add a few pieces of cooked chicken or shrimp before folding the tortilla in half."

  1. Well, this was delicious, and very easy. I scaled the recipe to one serving, using two tortillas one on top of the other, rather than folding them. Didn't use a chile this time, but do want to try it sometime soon. The recipe gets bonus points because I was able to use my pizza cutter. Thank you very much for sharing this recipe with us.
