Quick and Easy Pork Kebab (Souvlaki)
"An easy but yummy greek dinner, served in pita's. A great change from hamburgers as a "dinner" sandwich. Can be cooked on the barbecue as well."

- 1 kg pork shoulder
- 1 garlic clove, crushed
- 1 sprig rosemary
- 100 ml olive oil
- 1 lemon juice
- mixed salad green
- 1 red onion, finely sliced
- 1 tomatoes, finely sliced
- 1⁄2 cucumber, finely sliced
- 150 g tzatziki
- 1 teaspoon lemon juice (to taste)
- 4 pita breads
- 150 g hummus
directions
- Preheat the oven to 180C/gas 4. Heat a roasting tin and sear the pork fillet. Season and remove from the heat. Add the garlic, rosemary, olive oil and lemon juice. Roast in the oven for 25 minutes. Remove and rest for 10 minutes. Carve into slices. You can also bbq it.
- For the salad: put the leaves, onion, tomato and cucumber in a large bowl. Add the tzatziki and a squeeze of lemon juice and mix well.
- Heat the pitas by lightly wetting and then lightly oiling each side. Place in a frying pan heating either side gently.
- Slice through the top of the pitta and spread some humous on the inside. Then fill the pitta with the pork and salad mix. Halve each ptta to serve.

So easy to prepare (I cooked the pork in the oven) and so fabulously moist and flavoursome with the salad greens (I used baby spinach leaves) and the other ingredients. I used KITTENCAL's Recipe #157176 and Cookgirl's Recipe #126463. I shall certainly be making this again and wouldn't want to change a thing. Loved the lemony flavour! This made DH extremely happy on Father's Day. I used pork loin and cooked it in the oven. It came out so very delicious! I used two tried-n-true Zaar recipes: Recipe#138075 #138075 and Recipe #116906 #116906. We'll be making this again and may try it on the grill. Thanks MarraMamba.

I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking.
My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely. I love him dearly
