  • Preheat oven to 350°F.
  • Wash the potato, puncture with a fork in 2-3 places, then microwave on high for about 4 minutes.
  • Rinse it again so it's wet. Sprinkle on salt and pepper if desired.
  • Finish baking in oven for 10 to 15 minutes.

  1. I found this worked and I got a crispy skin on my potato (which I wanted) by baking it in the oven for about 20 minutes instead of 15 and turning the temp up to 375 after 10 minutes. I also rinsed them with water as suggested both before microwaving and before putting them in the oven, and I think that helped, but they need a slightly higher temp than the recipe says if you like the skin crispy.
     
  2. This is how I make them & they are FANTASTIC .. I have gotten many compliments on them as well as been asked to make them for a friend's dinner party! YOU WILL ENJOY THESE!
     
  3. This worked for a quick lunch, but the texture definitely stays softer, the way it does when you just microwave the potatoes. I was hoping the skin would be crisp after being baked- I wonder if baking at a higher temp would work? Thanks anyway.
     
  4. Potatoes came out delicious, but they do need much more time in the oven than is stated here.
     
  5. I had a monster 1 pound potato, microwaved 5 minutes with 5 fork stabs, rinsed off, coated with butter, salt, and pepper, wrapped in foil, and put in oven 350 degrees for 15 minutes. Smash it on the counter and let it sit 5-10 minutes. This is the best baked potato I've ever had.

With 5 kids and a hungry husband to feed, I'm always looking for good, budget friendly meals. We generally eat meals that use little meat (I try to use 1 lb or less per dinner, and none the rest of day), so that means lots of casseroles and meats with gravy. I enjoy baking, so bread recipes and desserts tend to get saved more frequently than others. I'm especially partial to chocolate and lemon (although not together).
