- 1 (12 ounce) can cocktail vegetable juice
- 1 (8 ounce) can diet pack sliced beets, undrained
- 1 beef bouillon cube
- 1 teaspoon lemon juice
- fresh dill or parsley sprig
directions
- place vegetable juice and beets in a blender container, cover and blen high speed, 2 seconds. turn into medium saucepan. Add bouillon cube.
- bring to boiling. add lemon juice, reduce heat, and simmer for 5 minutes.
- pour into 6 cups.
