Quick Cherry Cheesecake

- 1 small pre-made graham cracker crust (extra 2 servings size)
- 3 (680.38 g) package cream cheese (softened)
- 177.44 ml sugar
- 3 large eggs
- 14.79 ml vanilla
- 595.33 g can cherry pie filling
directions
- Combine all 3 packages of softened cream cheese in a large mixing bowl.
- Add sugar, and blend on medium speed with an electric mixer until well blended. it will be very thick.
- add eggs, and vanilla.
- blend again on medium speed until well blended, mixture should be smooth and pourable.
- preheat oven to 450 degrees.
- remove plastic cover from pie crust, and add cream cheese filling to crust.
- bake at 450 degrees for 10 minutes.
- reduce heat to 250 degrees and bake for 35-40 minutes (times vary depending on your oven) so keep an eye on it.
- let cheesecake cool on stove top for at least an hour or until cool.
- add cherry pie filling and refrigerate
- ENJOY!

Simple, decadent and breeze to make. To me, this was a dense cheesecake. I loved that it wasn't overly sweet. I topped with a can light cherry pie filling. I think the only thing I'll do different next time, is add a layer of sweetened sour cream. I love the tang it adds to cheesecake. Thanks so much for sharing this flexible keeper of a recipe.

This is indeed a quick, no hassle cheesecake. It's not too sweet and since it has 1 whole tablespoon, you can really taste the vanilla. I don't care much for dense cheesecakes, so I enjoyed this one because it's creamy yet not super dense. I used my mom's home canned blueberry pie filling instead of the cherry because that's what I had, but next time I can some cherry pie filling I'll try it with this cheesecake. Thanks for another great recipe! Made for PAC 2010.

I am 23 years old and have had quite a few cooking lessons from my mom. We were always a meat and potato kind of family. We would sit down together for family meals in the evening when my dad would get home from work. Then I married my Cambodian husband and have been forced to try foods outside of my comfort zone. I try to follow in my parents foot steps and have a family meal together most nights. We like to try a variety of different kinds of food from american, french, asian, mexican, etc. I am a stay at home mom, so I look forward to trying new dishes, and reading through the recipes for new ideas. I have had quite a few new recipes added into my regular rotation because of the wonderful recipes on this site. Also my little chef, (3 year old daughter) enjoys helping so we get to spend quality time preparing the dishes. I use recipezaar on a regular basis and am always on the lookout for new recipes!
