Quick Chick Trick

"I came across this recipe in an old Telephone Pioneers of America (Tennessee) cookbook and it looked easy and yummy. It would definitely be a quick recipe for moms with little time! *Try adding some mushrooms when heating the sour cream/soup mixture."

  • Boil chicken; tear into small pieces and line bottom of dish.
  • Mix together soup and sour cream; heat just to boiling and pour over chicken.
  • Crumble all crackers over mixture.
  • Melt butter and pour over crackers.
  • Bake about 20 minutes at 350 degrees.

  1. My son saw this on a show called Big Smo, apparently they have coutry rappers, who knew? Anyway, he asked me to make it. His Girlfriend and I seatched the internet like crazy. We found that apparently every person who saw the show was looking for it too! I couldn't figure out what the big deal was when I read the ingredients..I mean really? Soup, Sour Cream, Chicken and Cracker??? But I made it and there was almost nothing left out of a 13X 9 pan! GF and I only ate 1 bowl between us. They loved it! Making it again tonite, and remembered I had never reviewed it! So here you go, a must try! Can use a rotiserrie chicken from the store also for even quicker prep. I use the largest breasts I can find, usaully 2.5 - 3 lbs. And I use 2 cans of soup and 16ozs od sour cream. I serve a greenie on the side, brocolli, spinach or a salad.   2. This is super quick and easy to make! Made this all through college as a budget meal and still love it! I also put a layer of buttery cracker at the bottom of the dish as well as on top. It makes it thicker and better in my opinion. A must try! And super easy!
     
  3. We cook this all the time.....my family can't get enough of it and there are never any leftovers.
     
  4. This is excellent and delicious when eaten on a hamburger bun as a sandwich. I added some onion and garlic powder, salt and pepper, and I used Townhouse crackers and mixed them in, instead of putting on the top and it made a delicious creamed chicken sandwich.
     
  5. Have not even tried it yet, but if Mama Smo made it it's getting 5 stars and I'm trying it. She is the sweetest mom and love Big Smo.

Tweaks

  1. I use bacon flavored Ritz instead of regular ones.
     
  2. instead of soup mix I used chicken base with corn starch and added potatoes to thicken up, carrots celery and onion and then topped with crushed ritz mixed with crispy onions like the ones that go on green bean casserole. delicious. ( skipped the butter)
