Directions

  1. Spray skillet with nonstick spray.
  2. Preheat pan over high heat.
  3. Add chicken, and cook, stirring, for 3-5 minutes, or until no longer pink.
  4. Reduce heat.
  5. Add tomatoes and their juice, tomato sauce, green pepper, celery, onion, mushrooms, oregano, basil, parsley and salt.
  6. Bring to boil; reduce heat and simmer, covered for 10 minutes.
  7. Serve over rice, pasta or potato.
