  • Chop the Beans , Onion and Sprigs of Coriander.
  • Break apart the leftover chicken pieces.
  • Heat 1 tablespoon butter in a heavy based pan.
  • Add the beans and onion.
  • Saute for 2 mins and set aside.
  • Add the remaining butter and the leftover rice and saute
  • Add the salt and pepper while stirring.
  • Break 2 eggs and scramble in the same pan and mix with the rice, while sautéing.
  • add the shredded chicken and the veggies to the rice and stir for 2 minutes.
  • Take off the heat and add the coriander sprigs for decoration.
  • Serve hot.
