directions

  • Chop the peppers, garlic and ginger in a food processor.
  • In a bowl, mix the above ingredients with the curry powder and yogurt.
  • Cut the chicken breasts into narrow strips.
  • Paint the chicken strips with the spicy-yogurt mixture. Use a spoon, brush or your hands. Refrigerate it to marinade as long as you can. 10 minutes will do but it will be better if you have 30 minutes.
  • Heat the oil in a skillet, iron preferred, and when really hot toss the chicken strips inches Cook on each side until brown or black.
  • Serve with toothpicks,a small bowl of chopped coriander, plain yogurt, or any other condiment you find in your refrigerator. Dried figs, blue cheese, chutney and pine nuts might be considered.
  • Serve with left-over rice if you have it.

  1. My husband found this recipe and asked me to make it. It was really delicious. I served it with rice pilaf and pine nuts. Thank you!!! I will make this again!

My current pet peeve is the Adkins (high protein) revolution. My significant other is awaiting a kidney transplant and can only eat low protein foods. Grocery shopping can be a nightmare and eating out is very difficult even in vegetarian restaurants where TVP is often added without disclosing it on the menu. Update: Kidney transplant successful! Unfortunatley the steroids that she will be on for the rest of her life has caused her to become diabetic. Now we are on a high protein, low carb, low fat, small frequent meal diet, but I'm not complaining as she is alive and y'all make it easier and more fun to cook.
