Quick Con Queso Dip

"This dip is a hit wherever I take it. You can adjust the level of spice by using hotter sausage or the hot version of RoTel or both."

  1. Yummy! This was like sausage gravy on a chip with a little bite. Thanks for sharing, Emily.

  2. Too much meat even when we used half the meat! But delicious none the less! I miss a more flavorful cheese though.

  3. Very easy recipe. As stated before, it is very meaty. I've made it by increasing the cream cheese and rotel by 1.5. It made a little more and was still very meaty and delicious.

  4. This is such a wonderful dip. Easy as can be. Refrigerated and heated right back up. This is a Wow and must have. Will make over and over. Hugs

  5. "Addicting" was the word everyone used to describe this dip! I took it to a Super Bowl party and it lasted about 5 minutes. I should have doubled the recipe. Very easy and very, very good.

I am a SAHM of 3 - I really love to cook, but find it challenging between 4-6 in the evening, so I am constantly on the lookout for quick and yummy dishes. My favorite cookbooks are from my local junior league, they are Colorado Cache and Creme de Colorado. I also love the Fanny Farmer cookbook for basic stuff.
