Quick Cranberry Apple Dessert (Pillsbury Winner)

"Credit for this recipe goes to Marie Balhiser of Oregon who entered it in the 1976 Bake-Off. The sweet apples pair up with the tang of cranberries for a wonderful filling that's topped with flaky biscuits. Mmmm."

  • Fruit Mixture

  • 4 cups chopped peeled apples
  • 2 cups cranberries
  • 1 cup water
  • 1 14 cups sugar
  • 12 cup chopped nuts, if desired (optional)
  • 2 tablespoons cornstarch
  • 14 teaspoon salt
  • 14 teaspoon cinnamon
  • Topping

  • 1 (12 ounce) can pillsbury golden layers refrigerated biscuits
  • 14 cup sugar
  • 12 teaspoon cinnamon
  • 3 tablespoons margarine or 3 tablespoons butter, melted
  • 14 cup chopped nuts

  • Heat oven to 400°F
  • In large saucepan, combine apples, cranberries and water; cook over medium heat for 5 minutes.
  • In small bowl, combine 1 1/4 cups sugar, 1/2 cup nuts, cornstarch, salt and 1/4 teaspoon cinnamon.
  • Stir into apple mixture; cook 2 to 4 minutes or until thickened.
  • Pour into ungreased 13x9-inch pan.
  • Separate dough into 10 biscuits.
  • Separate each biscuit into 2 layers.
  • In another small bowl, combine 1/4 cup sugar and 1/2 teaspoon cinnamon.
  • Dip one side of each biscuit in melted butter, then in sugar mixture.
  • Arrange biscuits, sugared side up, over hot apple mixture, overlapping to make 2 rows.
  • Sprinkle with 1/4 cup nuts.
  • Bake at 400°F for 20 to 25 minutes or until deep golden brown.
  • If desired, serve warm with cream or ice cream.

I am... ~a mother of 2 kids (19 and 22) who are extremely picky eaters. The mere mention of "healthy" sends them running in the opposite direction. They prefer the creamy, cheesy, fried stuff that they weren't brought up on! ~a wife of a wonderful man who fights an expanding waistline and will lovingly eat most anything I set before him. Everything is 5 stars to him. :) He's the easiest customer a cook could ask for! ~a teacher who tends to reach for comfort foods to relieve stress. I am a middle school reading specialist. The miracles I see on a daily basis keeps me going! But it's also stressful, so keep me away from the cookie jar! I really have to fight off the sugary, fat-laden stuff that has no worth beyond the momentary comfort in my mouth. ~and I'm also a daughter who was brought up on home cooked meals back when calories meant nothing and taste was everything! That is an idea built into my system that's hard to shake! My mother raised 8 kids (I'm #7) on her home-cooking and I always teased her that she didn't raise a single skinny kid! I luckily inherited her great love of cooking and baking. (I miss you Mom!) ~finally, I'm "mom" to the best Bichon in the world. He is Quincy, our kid in a dogsuit.
