Quick Creamy Vegetable Soup

"This really is a good, quick soup which is tasty and pleasing. The recipe calls for using cream of chicken soup but any creamy soup may be used. I like cream of onion or cream of shrimp."

  • 1 12 cups water
  • 12 teaspoon salt
  • 1 cup frozen mixed vegetables
  • 14 cup celery, chopped
  • 1 (10 1/2 ounce) can condensed cream of chicken soup

directions

  • Combine water and salt in a saucepan. You may want to substitute chicken broth for the water.
  • Add the vegetables and celery and cook 10 minutes.
  • Blend in the cream of chicken soup or whatever creamy soup you choose.
  • Reduce heat to simmer and heat 2 to 3 minutes longer.

  1. Made this for New Kids on the Block tag game and the recipe states what it really is "quick". I did add some diced onion and minced garlic (DH and I love those) so I sauteed them and the celery a little in butter then followed the rest of the instructions (except that I used chicken both and might use a little cream next time). Very tasty but DH wanted some meat in his so next time I have some chicken left over I will make this again and put in some chicken. I think I might even try the cream of onion soup too! Thank you.
